This is, quite simply, what we have wanted to do with this cuvee, Temps de Lune.
To ‘take our time’ to put our feet up, to look up, and ponder the moon and the stars, exploring the mysterious yet natural universe and its cyclical cadences. Temps de Lune is harvested and vinified while taking into account the biodynamic lunar calendar and favouring ‘Fruit Days’. This is said to emphasize the aromatics of the wine. In every other respect, we have crafted this 100% Cabernet Sauvignon with minimal intervention, in small concrete vats, without adding any Sulphur.

VIN DE FRANCE

GRAPE VARIETY : 100% Cabernet Sauvignon

SOIL : Gravel on clay

MATURATION : Vinification and ageing in small concrete vats, with no added sulphur.

TASTING NOTE :  On the nose, very marked traces of soft black fruits (blackberries and black currants) but equally a spicy, lightly roasted side resembling mocha. The sensation in the mouth is fresh, with soft tannins and a hint of mint on the finish.

FOOD MATCHING : Marie suggests a platter of cured meats, shoulder of lamb, or vegetable lasagne.
Sylvie will serve this wine with red meats accompanied by a bilberry sauce, and perhaps even try the combination of a chocolate fondant and blackcurrant ice cream.
